Deliciously Stuffed Chicken Breasts

Ingredients

• 4 large skinless, boneless chicken breasts, pounded thin, or more to taste
• salt and ground black pepper to taste
• Filling:
• 1 cup diced ham
• 1 cup low-fat mayonnaise (such as Smart Balance®)
• 1 cup low-fat sour cream
• ½ cup shredded Cheddar-Monterey Jack cheese blend
• ½ cup shredded mozzarella cheese
• ½ cup shredded Parmesan cheese (Optional)
• ½ teaspoon onion powder
• ½ teaspoon garlic powder
• ½ teaspoon smoked paprika
• 8 slices bacon, or more to taste (Optional)
• 8 toothpicks, or as needed
• ¼ cup whole wheat bread crumbs, or as needed

Step 1

Lightly heat your oven to 375°F (190°C). Season the chicken breasts with a bit of salt and pepper to taste. In a big bowl, combine the ham, mayonnaise, sour cream, the cheese blend, mozzarella, Parmesan, onion powder, garlic powder, and smoked paprika—mix everything well. Spoon about half a cup of this cheesy filling onto each chicken breast, then roll them up tightly around the filling. Wrap each roll with two slices of bacon and use toothpicks to keep everything secure.

Step 2

Pour some bread crumbs into a shallow dish. Roll each bacon-wrapped chicken breast in the crumbs, making sure they’re nicely coated. Place the chickens in a baking dish and pop it in the oven. Bake for 30 to 40 minutes, or until the chicken is cooked through and the juices run clear. If you have a meat thermometer, it should read at least 165°F (74°C) when inserted into the thickest part. Let them rest for a few minutes before serving, then enjoy!
