- Chopped Garlic 1 tsp

- Soy sauce 1 tbsp
- Barbecue Sauce ½ tbsp
- Oyster sauce 1 tbsp
- Chilli Flakes ½ tsp
- Sugar ¼ tsp
- Cornflour 1 tbsp
- Water ½ Cup

Step 1
Crack the eggs into a bowl and beat them well. Heat about a teaspoon of oil in a pan, pour in the eggs, scramble them gently, then set aside.
Step 2
In a separate bowl, mix together soy sauce, oyster sauce, barbecue sauce, chili flakes, sugar, cornflour, and water. Give it a good stir and set it aside.

Heat another teaspoon of oil in the pan, add the carrots, chillies, and spring onions, and stir-fry for about a minute. Then toss in the chopped garlic and cook everything for another 2-3 minutes.

Add the scrambled eggs back into the pan along with the sauce mixture. Stir everything together and cook for another 1-2 minutes until the sauce thickens a bit.

Sprinkle fresh coriander on top, turn off the heat, and serve.
