Simple Cooking Tips
- Let the sauce simmer gently to develop a richer taste.
- Cook the pasta just until al dente to avoid it becoming mushy when mixed with the sauce.
Step 1
Bring a pot of water to a boil, then add the spaghetti. Cook it until it’s almost done (about 90%), then drain and rinse with cold water to stop it from cooking further.
Step 2
Heat some oil in a pan over medium-low heat. Add the chopped garlic and onions, and cook for 2-3 minutes until they soften and smell fragrant.

Add the minced chicken to the pan and cook for about 5-7 minutes, breaking it up as it cooks. Season with salt, pepper, and chili flakes, and give everything a good stir.

Pour in the vinegar, soy sauce, and chili sauce, cooking for another minute. Then add the chicken stock and tomato paste, stirring well. Let it simmer for 5-7 minutes until the sauce thickens.

Once the sauce is nice and thick, stir in the chopped coriander leaves and turn off the heat.
