Cooking Techniques
- Use ground meat with a bit of fat to keep the kebabs juicy and tender.
- Cook over medium heat to ensure the kebabs cook evenly without drying out.
Step 1
Start by roughly chopping coriander leaves, green chilies, mint leaves, and onions. Throw them into a food processor and pulse until finely chopped.
Step 2
Add the chicken, cream, yogurt, ginger-garlic paste, salt, pepper, and cumin powder to the mix. Blend everything together until it forms a smooth, well-combined mixture.
Step 3
Lightly grease your hands with oil (or use a straw or pencil as a mold) and shape the mixture into kebabs on skewers.
Step 4
Heat some oil in a pan and fry the kebabs until they turn golden brown on all sides.
Step 5
For that smoky flavor, heat some oil until it’s smoking hot, pour it over hot coals or a small piece of charcoal placed in a bowl, then immediately cover the kebabs with a lid to trap the smoke. Let it sit for a few minutes.
Step 6
Serve your kebabs hot, with refreshing green raita on the side.
